Fig Tree is a team effort

I WRITE to make amends for my oversight, due to my excitement at the Fig Tree winning the ‘Wales The True Taste’ Best Restaurant Award (Penarth Times, August 2).

When interviewed by the reporter, I seem to have answered all questions as if I was the Fig Tree, when in fact I am just part of the Fig Tree.

It is owned and run by Sandie Guppy and as well as myself, with the support of a large team of staff, all dedicated to providing the best food and service. We would also not be where we are without our many suppliers, several of whom deliver to us twice a day, ensuring the food is as fresh as can be.

Without Sandie’s relentless work and support, the Fig Tree would not function as it does and we would not have won our accolades.

I also thank Mike Marsh, a key member of the team who looks after the smooth running in mine and Sandie’s absence; and Tom Westerland who heads up the kitchen when I am busy in other areas. Finally Sandie, myself and all at the Fig Tree to say a huge thank you to all our customers.
